Dom Prignon--Vintage 1988 Tasting note: Floral, toasty aromas mingle beautifully with the firm, pineapple fruit, with a distinct perception of acidity on the finish. The Chardonnay from Dom Prignon vineyards must have been very powerful in 1988, because the proportion in this blend was reduced to 45 - yet it is still dominating the 55 Pinot Noir. In theory the older the Champagne, the more dominant the Chardonnay should become, but I get the impression the Pinot will eventually exert itself. Either the blend will asssume a typical seamless Dom Prignon balance, or it will tip towards biscuity Pinot. T.S. See further lots throughout the sale
