MATURE VINTAGES OF CLASSIC CHAMPAGNE Old vintages of champagne have always been a rather peculiar English taste, the joy of connoisseurs, providing of course that they are of the top "marques" or brands and emanating from a good cold cellar.

The characteristics are a deeper colour, straw yellow or gold with much subdued mousse, often just a prickle. Bottle-age changes the bouquet as it does old white burgundy. On the palate, a lovely old "nutty" flavour, with subtlety and length. MB
Dom Pérignon Brut--Vintage 1949
The inimitable "Dom" of an excellent mature vintage. The colour will have deepened to a straw gold, and the effervescence will be delicate - more like a fine old white Burgundy. MB
