Father and son Bernard and Bertrand Maume's wines mature in a damp, cold, deep cellar in Gevrey-Chambertin, in oak barrels of varying ages and origins. Yields are low and fermentations long. They are careful not to allow new technology to dominate the personality of the wines, of which Mazis-Chambertin is regularly the most magnificent and hard to find. AH
