Don Cosme, the founder of the Bodegas, ranks alongside the pioneering Marqués to Riscal for his inquisitive nature and for his untiring and enterprising spirit. There are similarites between these two historical figures: both studied in Montpellier, one of the most famous oenology schools at the time. Both founded wineries which would thrive for more than a century and which, in modern times, would once again be at the forefront of a wine-making revolution, with the same aim: to create serious, cask-aged red wines. The Marqués came first as regards of date of his winery's foundation, 12 years before Palacio, but just as soon as the group of Galician workers Riscal had hired to build his winery finished the job they moved on from Elciego to Laguardia to start work on the Palacio winery.

Don Cosme was a modern thinker, implementing such novel ideas as putting the design of the Cosme Palacio label out to tender with a public contest (the assignment was won by an Italian). And he proved a resourceful man. He did not give in when the dreaded phylloxera plague swept through the vineyards of Rioja. Determined to continue making wine, he went to Valladolid where he rented a winery and, with the assistance of his oenologist Txomin Garramiola, he used the local Tinto Fino grape to make a Rioja-style wine. After the plague had run its course Don Cosme returned to Laguardia, but Txomin stayed behind in Duero. Some years later he would produce a wine called Vega Sicilia.
