Mont Olivet
The Sabon's are strict traditionalists making a wine that is at once earthy spicy and exotic from vines that are over eighty years old. Intense mineral notes emanate from a robust wine of briary fruit, yet has length and elegance. The Cuvée du Papet, named after the Sabon brothers grandfather, is the best barrels from the oldest parcel in the vineyard and has almost a Pomerol-like plushness and warmth.
