Rémi's white wines are produced from low yields, and begin evolution in barrels outdoors. The wines continue alcoholic fermentation using the cooling effects of the autumn nights for three weeks when they are taken into the cellar, for a slow malolactic fermentation, which can sometimes last until the following spring. The wines are aged on their lees being stirred periodically until March, when the wines are racked off and placed into stainless steel tanks for a further five months until fining and bottling. The wines show finesse, richness and depth and are great expressions of the terroirs of the area.
