In a relatively short amount of time he has managed to build up his business into one of the major red wine négociants in Burgundy. Grapes are bought from over 40 different growers, but Nicolas is heavily involved in the vineyard, as he is a firm believer in biodynamic viticulture. Nicolas aims for purity of fruit as his main objective. Anthony Hanson on tasting a full range of 2001s, remarked "I was struck by the high level of quality, the restrained use of new oak, the fidelity to individual site character and the fine potential of these wines". And went on to write that in the future "this also is a company to watch". The Nuits Saint Georges négociant Cottin Frères has recently bought the business, allowing Nicolas to concentrate fully on making the wines. The wines are characterized by displaying elegance and purity.
