Aubert de Villaine makes it clear that each vintage presents its own set of circumstances, and one always has to be flexible in order to accommodate the nuances of nature. For many years, this domaine has been cultivated biodynamically, although the owners do not advertise this as much as other estates do. They continue to replant with material that is indigenous to the domaine's own vineyards; they have never added newer clones. At present, the average age of the vines is at least 45 years.
With respect to vinification, the fruit is never destemmed, and there is a 5-6 day cold pre-maceration before the fermentation is allowed to begin. There is pumping over and a bit of pigeages on a daily basis. The maceration periods are relatively long, but they avoid an exaggerated extraction of tannin. The wines are always aged for at least 18 months in 100 new oak, which the owners feel is the most sanitary condition for producing wines that are bottled without filtration.
