Of the reds, 65 are Cabernet Sauvignon, 28 Merlot and 7 Petit Verdot and of the whites, 60 are Sauvignon Blanc, 30 Sémillon and 10 Muscadelle. The Grand Vin is made from vines that are generally older than 30 years. Younger vines are used for the production of the second wine, Les Fiefs de Lagrange, and only accounting for 3 of production is their dry white wine called Les Arums de Lagrange. Soils are predominantly gravel with some sand and iron-rich clay. The grapes are harvested manually and sorted in the vineyard. Fermentation takes place in 56 temperature-controlled stainless steel vats that range in size from 60 to 220 hectolitres. The temperature never exceeds 30 degrees and maceration lasts for between 15 and 25 days depending on the vintage. Wines are matured in oak, and the proportion of new oak for the Grand Vin is 60 for the second wine is 20 and for their white is 80
