ParcelWineBuyers from within the EU: VAT payable … Read more CHATEAU QUINAULT L'ENCLOS Château Quinault is situated in the heart of the town of Libourne in St-Emilion. The château was bought by Dr Alain Raynaud in 1997, who invested heavily in improvements, such as buying temperature- controlled tanks in both concrete and stainless steel and the construction of a barrel storehouse. The 15 hectares of vines are planted with 65 Merlot, 20 Cabernet Franc, 10 Cabernet Sauvignon and 5 Malbec and the average age is 50 years. Grapes are sorted twice, both before and after destemming. Firstly there is a cold soak for between 5 and 6 days. The temperature is slowly raised and fermentation starts naturally without adding additional yeasts. Pressing occurs in a traditional vertical basket press and the wine is transferred into barrels for malolactic fermentation to take place. Half of the wine is aged on its lees for up to one year before being racked and transferred into a different barrel; the other half is regularly racked every three months. Generally barrel maturation lasts between 18 to 24 months according to the vintage. Annual production is approximately 60,000 bottles and the second wine is labeled La Fleur Quinault.
