Ugo Arguti was retained as director and Michel Rolland has become involved in the wine making. The château has 51 hectares or red vines and one hectare of white. Of the reds, 77 are Merlot, 14 Cabernet Franc and 9 Cabernet Sauvignon, and of the whites, 41 are Sauvignon Blanc, 33 Sémillon, 21 Sauvignon Gris and 5 Muscadelle. Green harvesting is used to reduce bunches to between six and eight per vine. There is also rigorous sorting both in the vineyard and the winery. The red grapes are not crushed, and placed into wooden vats. There is a long pre-fermentation cold soak. Fermentation occurs with naturally occurring yeasts. The cap is regularly punched down. Malolactic fermentation takes place in oak, and the wine is matured in 50 new oak for up to eighteen months. Finally the wine is fined with egg whites and not filtered before bottling. Annual production is about 160,000 bottles and the second wine is labeled Le Cadran de Fombrauge.

Château Fombrauge--Vintage 2000
Saint-Emilion, grand cru
Tasting Note: A revelation, this stunning wine has turned out to be even better than I thought. Opaque purple-coloured, with gorgeous ripeness and richness, a big, sweet mid-palate, and a seamless finish revealing loads of fruit, chocolate, glycerin, and ripe tannin, this opulently-styled 2000 will have few detractors. It is hard not to be totally seduced by this effort. Robert Parker, Wine Advocate 146, April 2003.
