Long a source of excellent grapes, Pegau began wholesale domain bottling of his own wine with the 1979 vintage, though the family has been associated with wine in the region since the 17th century. The flavor profile of Paul Feraud's wines are similar to his childhood friend Henri Bonneau albeit less voluminous. The recently introduced Capo cuvée, though, does render the Pegau experience another dimension. The cepage is old vines Grenache from legendary La Crau with a small amount of all other twelve permitted varietals from hand tended vineyards. The production is a miniscule 500 cases. The wine takes over a year to ferment in large oak casks and is weighty yet with exceptional smoothness. Kirsch, blackberry, truffles and Provencal herb aromas predominate. Pegaus Capo represents the current zenith of traditional Châteauneuf-du-Pape.

"The debut release of 1998 Cuvee da Capo (made from incredibly low yields of 90 Grenache and 10 the other twelve permitted varietals) is profound. The color is a dense, thick-looking, ruby/garnet/purple. The aromas begin slowly, but then roar from the glass like an out-of-control locomotive, offering up a smorgasbord of candied black fruits, pepper, garrigue, earth, and truffles. Enormously thick and rich, but, amazingly, not heavy, this blockbuster, full-bodied Chateauneuf du Pape is still youthful, but should age gracefully for three decades."
