"Golden-amber, with roasted, spicy aromas, owing more to heat concentration than noble rot. This is a sumptuous wine, with Seville orange peel flavours, and superb intensity. A touch lighter than the 1937, very long. How best to serve a rare, old wine like this? With pike from the oven, garnished with crayfish, or a roasted, fatted chicken, first the breast meat, then the thighs after an extra few minutes in the oven. Or a veal chump chop, with morels." AH
