With a passion for good food and fine wine, Jacques Seysses seized the chance to purchase Domaine Graillet in 1967 to pursue his vision to not just drink wine, but to make it as well. After renaming it Domaine Dujac (the shortened "du Jaques" in English meaning "of Jacques"), he produced his wines by blending traditional winemaking and modern techniques, allowing for his own refined style. "Use knowledge and technology to counter accidents - for example, bad weather - but, if all is going well, don't interfere," says Seysses. Dujac wines are neither filtered nor fined and nearly all of his grands crus are aged in 100 new oak. The Domaine in Morey-St-Denis was originally made up of 4 hectares of vineyards but has since grown to 15.5 hectares of production. Domaine Dujac now includes holdings in the following Grand Cru vineyards: Clos de la Roche, Clos St-Denis, Bonnes-Mares, Echézeaux and Charmes-Chambertin.
