THE FRED PARKS COLLECTION
Sold to Benefit the Conrad N. Hilton College of Hotel and Restaurant Management at the University of Houston
Fred Parks was a famed trial lawyer, philanthropist, enthusiastic wine connoisseur and the quintessential self-made man. Born in Oklahoma City in 1906, he was once so poor that he was forced to sleep on the streets of Houston. Fred worked lots of odd jobs before graduating from South Texas College of Law in 1937. After serving as an Army Air Force officer in Italy during World War II, he forged a 50-year career as a trial lawyer and later became a successful entrepreneur in the transportation industry.
In 1994, renowned wine expert Denman Moody introduced Fred to the University of Houston's Conrad N. Hilton College of Hotel and Restaurant Management. Fred was so impressed that he donated a portion of his wine collection to the College that same year. This collection became the foundation of the Fred Parks Wine Cellar and featured more than 1,000 bottles, ranging from the early 1900s to contemporary vintages. After his death in 2001 at the ripe old age of 95 (which goes to show what drinking a glass of wine a day will do for you), his estate donated the remainder of his collection to Hilton College. A generous grant from the Fred and Mabel R. Parks Foundation in 2006 created the Fred Parks Boardroom, which allowed us to pair Fred's remarkable wine collection with his passion for wine education. Today, the boardroom serves as an international repository for wine research and education, while also providing an intimate setting for meetings, tastings and other exclusive events.
While Fred appreciated all fine wines, he was especially passionate about French wines. His impressive collection includes all five of the First Growth Bordeaux wines- Chteau Lafite Rothschild, Chteau Mouton Rothschild, Chteau Latour, Chteau Margaux and Chteau Haut-Brion-and many of the other Great Growths of Bordeaux. Many of these wines are from the 1982, 1989 and 1990 vintages-all considered some of the top vintages of the 20th century. Fred also purchased futures of the '82, '89 and '90 vintages. These wines have always been kept under ideal conditions in custom-built wine storage. Fred purchased the wines on release or as futures. They went directly to his cellar and were only moved once-to the Fred Parks Wine Cellar and Boardroom here at Hilton College. Since Fred's passing in 2001, they've only been moved one other time: when they were inspected by Christie's specialists and sent via temperature-controlled truck to New York for this auction.
The funds generated from the sale of these wines will be used to support and enhance Hilton College's Wine & Spirits Program, which has grown from a single wine appreciation class in the 1980s to the Beverage Management and Marketing minor we offer today, featuring eight beverage classes, an internship and an annual field trip to California's wine country. Plans are also under way to build a wine sensory lab, and a fermentation, brewing and distillation lab.
Fred's philosophy was to promulgate wine education to the masses. I think he would be proud of what we are doing here at Hilton College.
