Château-Chalon is the name of the village and of its unique appellation. The very small vineyard area is planted with the Savagnin grape variety picked late, sometimes into December. After slow fermentation the wine remains in small barrels, untopped up for a minimum of six years. The surface of the wines becomes covered in flor, similar to that on fino sherry. It is bottled in very distinctive dumpy Clavelin bottles of 62cl capacity.
The wine has great keeping capacity. Old vintages extremely rare and virtually unobtainable Above 2 bottles per lot
