Gerard Chave produced his first Vin de Paille in 1974, by laying out the grapes individually on straw for six weeks before pressing, and then letting the wine ferment slowly and naturally for two years in cask. Chave's Vin de Paille has since been made--in tiny quantities--in the 1986, 1989, and 1990 vintages. The 1990 is rputed to be the greatest.
