Bruno Paillard is one of Champagne's most influential figures. His impressive height and stylish appearance, combined with great knowledge and a large dose of humility have given him places on the boards of various organisations in Champagne. He started his house in 1981 after having worked for many years as a broker in the business. In order to get going he bought stores of wine from champagne house threatened with bankruptcy, or from growers. He is the first to admit that he didn't create the cuves in the early years of Bruno Paillard champagne. The '83 is his first real effort, and it marks a leap in quality. Bruno Paillard is determined to become one of the top champagne producers. He has 120 permanent contracts with wine growers in 32 villages. He uses 15 oak in all his champagnes, except the ross. He is also careful to have a large store of old reserve wines in barrels for six months. Only the cuve is used in Paillard's champagne - a measure he finances by using the second pressing wines for his other labels. The Pinot grapes mostly come from Bouzy, Mailly, and Verzenay, and the Chardonnay from Mesnil, Vertus, Cuis, and Szanne. Paillard, who also has a fondness for jaguars and art, has followed in Mouton-Rothschilds' footsteps and allows various artists to decorate his vintage labels each year. Paillard is also one of the few who releases the disgorging date on all of his wines. In August 1994, Paillard and Chanoine had the majority of shares in Boizel, which was permitted to continue to run it's own vinification.
