"Chave has also resurrected an old Hermitage practice of making a vin de paille. The tradition of taking whole bunches and leaving them on straw mats until they turn to raisins 60+ days after the harvest (usually in December), and then fermenting them, not only produces microscopic quantities of juice, but unbelievably concentrated, intense, honeyed wines that are known to have aged for more than a century."
