DOMAINE PONSOT
Domaine Ponsot grapes are habitually left to ripen late, achieving high natural alcohol levels. The wines can show disappointingly, immediately after bottling, because only minimal amounts of sulphur dioxide are used during wine-making. One should usually resist the temptation to assess them, or drink them, while they are immature. With bottle-age, complex aromas emerge and their powerful structures become fleshed out. Of Clos de la Roche Vieilles Vignes, we are privileged to be offering one of only two Methuselahs produced, in the vintages 1995 and 1996. These have lain undisturbed at the estate since the vintage, and are both marked No.1. It would be a shame not to age these exceptional rarities for at least 4 - 5 years further. AH
