Domaine Ponsot grapes are habitually left to ripen late, achieving high natural alcohol levels. The wines can show disappointingly, immediately after bottling, because only minimal amounts of sulphur dioxide are used during wine-making. One should usually resist the temptation to assess them, or drink them, while they are immature. With bottle-age, complex aromas emerge and their powerful structures become fleshed out.
