All port (except white port) is sweet but the level of sweetness is controlled, the natural sweetness of the must and the timing of the addition of brandy which stops the fermentation, leaving the residual, unfermented, grape sugar. Of the Symington marques, Graham is consistently the sweetest, Dow the least sweet. Also many notes: showing well at the Dow bi-centenary tasting in 1998; maturing well; fragrant, spicy bouquet and flavour. MB
