The earliest defence construction at this particular location consisted of a palace and a tower, which can be dated back as far as 1062. It's constructors were the Knights of Weitingen. From 1583 until 1585 the castle was modified by Jakob von Ehingen. He added a second floor to the palace, and built an additional west wing. During the early Baroque the castle was modified once again. Quirin von Hoehnstett transformed it into a four wing castle and added a rich façade decoration to it. At the end of the 17th century the Freiherrn Rassler von Gamerschwang bought first the castle Börstingen, located in the valley, and later in 1720 the mountain castle Weitenburg. In the 19th century the influence of Romanticism inspired the family to tear down the Baroque east wing and replace it with a Neo-Gothic building including a Tudor style tower with leaded gothic windows. Changes like these have also been executed in nearby castles, such as Burg Hohenzollern and Burg Lichtenstein. Since 1954 the Freiherrn Rassler run a hotel and restaurant in the main building of the castle. They have the facilities to celebrate weddings in their own registry office and the chapel. The guest rooms, with their old artful stuccoed ceilings, still correspond to the plans from the time of Quirin von Hoehnstett.
