Vinaigrettes
A vinaigrette is a locket, box or other vestibule, opening to reveal a grill or pierced lid that can hold within it a sponge or piece of gauze. In the 19th century, the sponge or gauze would have been soaked with vinegar, lavender water or another pleasant scent. Sniffing the contents was meant to ward off faintness or offer relief from unpleasant odors. Vinaigrettes were often suspended from a chain to be worn from a bracelet or chatelaine.
