"Opaque, amber brown; sweet, very rich, chocolatey nose and flavour yet with a refined, ethereal finish. Although there has been a long tradition of serving madeira with soup, usually turtle soup, before roast beef at Lord Mayors' banquets, the correct wine should be Sercial or Verdelho.
