The Roux brothers later, for a period, became backers for the original and best-remembered incarnation of Restaurant La Tante Claire, which was opened by Koffmann in Royal Hospital Road in 1977 and named after the admired aunt of a good friend. For the next 21 years, La Tante Claire established an unrivalled reputation as the place to experience genuine top quality French cuisine and well matched, mostly French, wines prepared lovingly by one of the original 'celebrity chefs' and Koffman's experienced wife, Annie. But this was a different kind of celebrity to that which we often see today, as it was earned gradually and even modestly through dedicated and continued attention to detail in the kitchen and not garnered instantly in front of a television camera. In fact, Koffmann has kept an extraordinarily low profile throughout his career by choice and, even as the recipient of many major culinary awards, would always maintain that "A full restaurant is my ultimate award". And La Tante Claire was always full. I know from experience that to reserve a table for lunch or dinner often required a patience extending to weeks or even months. Signature dishes and impeccable but friendly service set the standards for the culinary world to emulate and drew an admiring clientele (and earned 3 Michelin stars) from all parts of the globe. The success of La Tante Claire under Koffmann's expert leadership also further reinforced the proposition that truly great and memorable meals were always French in origin, prepared by a French master chef and served by a knowledgeable and efficient French staff. To bring the story up to date, when Gordon Ramsay quit Aubergine and made Koffmann an offer he couldn't refuse for the Royal Hospital Road premises, it allowed Koffmann to take up an offer from The Savoy Group, who were then seeking a Michelin-starred chef for The Berkeley Hotel in Knightsbridge. Thus, La Tante Claire relocated to Wilton Place in 1998 and continued to dispense its unique blend of culinary excellence, fine wine and friendly service until Christmas Eve, 2002.
