SPOTTSWOODE
Having acquired the estate with her late husband in the 1970s, Mary Novak released the first vintage of Spottswoode Cabernet Sauvignon in 1982 and now enlists the help of two of her daughters while still overseeing production. While the renowned Tony Soter was one of the early winemakers, Rosemary Cakebread became head winemaker in 1997 with a new state of the art winemaking facility completed a year earlier. The fruit is entirely estate grown, all organic since 1985, and is predominately Cabernet Sauvignon with a touch of Cabernet Franc for flowery spice. Aging takes place in French Oak, with and only the best barrels make the final blend after a strict selection. The resulting wine is dense and polished with well integrated tannins that allow Spottswoode to age well.

The sweet nose of cassis, lead pencil, and toast exhibits high class. Rich, medium to full-bodied, with moderately high tannin, this is a young, backward, delicious Cabernet Sauvignon that is just beginning to reveal its full personality.
