Château Cheval-Blanc--Vintage 1975
Saint-Emilion, 1er grand cru classé (A)
Levels into neck
Tasting Note: One of my highest marks at the Malmo tasting in 1995: rich 'legs', 'opening up agreeably' (the nose not the 'legs'); very much a Right Bank wine though tannic (Frans de Cock's dinner in Paris , 1995). An extraordinary explosion of sweetness after 20 minutes of shyness; sweet, rich, high extract, chewy and tannic (at Wolf's vertical in 1997). Most recently, a jeroboam at Eigensatz's 'Red Wine' gala dinner: soft, mature, cherry-tinged rather than the rusty orange I associate with '75s. Low-keyed, slightly varnishy, but opened up richly; better on palate, lean fruit dry finish. Last tasted at the Hotel Eden-Parc, Bad Schwalbach, Nov 2001. At best **** M.B.
