VAT rate of 17.5% is payable on hammer price plus … Read more HENRI & GEORGES JAYER The Henri & Georges Jayer Domaine consisted of 6.30 hectares concentrated in and around Vosne-Romaneé and comprising everything from Passe-Tout-Grains to Echézeaux wines. Production of the wines included; very low yields; as few rackings as possible (and always when there is high pressure to keep the lees at the bottom of the barrel); complete de stalking; using new Troncais barrels (with medium burn); never using cultured yeasts; and a pre-fermentation cold maceration (by reducing the vat temperature to 15 degrees for four or five days at the start which obtains a stable colour, before allowing it to rise to 34 degrees). The wines are extraordinarily complex and harmonious. The Henri & Georges Jayer Domaine subsequently changed its name to Georges Jayer in 2002, when Henri, George Jayer's brother, stopped making this wine. Unfortunately Henri Jayer, died in September 2006, however his work continues to inspire many young Burgundy growers.
