ParcelWineBuyers from within the EU: VAT payable … Read more CHATEAU HAUT-BAILLY Château Haut-Bailly is situated on the left bank of the River Garonne, between Léognan and the vineyards of La Louvière in the commune of Pessac-Léognan. The estate was created in the 1630's by Firmin Le Bailly, who was a banker from Paris and a wine merchant called Nicolas de Leuvarde. Today the estate is owned by Robert Wilmers, a banker from New York State who has invested heavily, expanding the chai and quadrupling the number of vats so that more plots can be vinified separately to aid in the selection process. The 28 hectare vineyard is planted with 65 Cabernet Sauvignon, 25 Merlot, and 10 Cabernet Franc. The sloping terrain has excellent drainage. At Haut-Bailly soils are sandy, mixed with gravel, on a subsoil of sandstone petrified with the remains of prehistoric fossil shells. Grapes are all hand-picked and there is a strict selection of only the best grapes. The first sorting is done in the vineyard, the second in the winery before de-stemming, and the final selection is made on a vibrating table after the grapes have already been de-stemmed. Temperature-controlled vats of different sizes (30, 60, 90, or 120 hectoliters) are used to vinify the different parcels. Alcoholic fermentation lasts between eight to ten days but maceration continues for another three weeks. Malolactic fermentation takes place in barrel. Three cellars have been built for oak maturation, one of which has been specially designed to facilitate the malolactic fermentation. The wine is stored in oak for about eighteen months. Every year, a large number of the barrels are replaced - the exact number varying according to the vintage. For example, in 1987, it was 33 in 1990, 65 and 50 in 1993. More recently, 60 in 2004 and 63 in 2005. For many years, Professor Emile Peynaud was the consultant-oenologist at Haut-Bailly. He was succeeded in 1990 by Professor Pascal Ribéreau-Gayon, and in 1998 by Professor Denis Dubourdieu. In 2004, Jean Delmas joined Haut-Bailly's oenology team.
