The property consists of 56 hectares producing both red and white wines (48 hectares are for red wines and 8 hectares are for whites). Michel Rolland has been hired as a consultant since 1996, and has implemented a number of changes such as later picking of grapes to ensure maximum ripeness. The soils are predominantly gravel over sandstone and are part of the same gravel croupe as Château Carbonnieux and Château La Louviére. The Gervoson's invested in the construction of a new chai as well as an enlarged barrel cellar where the Grand Vin ages for approximately 18 months using about 50 new oak. Since 2000 only new oak has been used for the white and the wine is aged for approximately 12 months.

Château Larrivet-Haut-Brion--Vintage 2000
Pessac-Léognan (Graves)
Tasting Note: The deep ruby/purple-coloured 2000's rich, complex perfume displays aromas of cedar, black cherry liqueur, melted liquorice, scorched earth, tobacco, and new oak. The wine is rich, firm, tannic, concentrated, and medium to full-bodied with admirable sweetness of fruit. It is a beautiful effort that should be drinkable between 2007-2020. Robert Parker, Wine Advocate 146, April 2003.
