The property which is situated in Saint-Julien consists of 102 hectares of red vines and 5 hectares of white. The proportions are as follows: For the reds; 66 Cabernet Sauvignon, 26 Merlot, 5 Petit Verdot and 3 Cabernet Franc. For the whites; 80 Sauvignon Blanc and 20 Sémillon. The current owners are Nancy Bignon and Lorraine Rustmann. The red grapes are harvested by hand, and are then sorted in the vineyards by up to 180 pickers and then once again on a sorting table at the winery. The grapes then pass through a passage equipped with a hot-air ventilation system in order to dry them of any morning dew or rain. Talbot has two vat rooms, the first which was built in 1989 is filled with wooden vats, and the second which was built in 1994 contains stainless steel vats and both rooms have a capacity of 4,500 hectolitres each and are equipped with temperature-control. The malolactic fermentation takes place in vats and then the wine is immediately run off into barrels, around 50 of which are replaced every year. The wine remains in oak for sixteen months in their air-conditioned cellars. Annual production from the château is approximately 550,000 bottles.
