ParcelWineBuyers from within the EU: VAT payable … Read more CHATEAU CHAUVIN Château Chauvin is situated in the north west of St-Emilion near to Pomerol. The estate has been in hands of the same family since 1891 when Victor Ondet bought Domaine de Chauvin. Victor was succeeded by Georges, and then Henri. They both invested in the property and achieved a ranking in the first St-Emilion classification of 1955. Subsequently the château was passed to his daughters, Béatrice and Marie-France who are the current owners. Their 15 hectares are planted with 75 Merlot, 20 Cabernet Franc and 5 Cabernet Sauvignon with an average vine age of 30 years. The soil is sandy with a subsoil of clay and iron. Green harvesting is used to maintain yields at around 35 to 40 hectolitres per hectare. Grapes are hand-harvested and then sorted twice; firstly mechanically on a vibrating sorting table and secondly by hand on a conveyer belt. Fermentation takes place in temperature-controlled stainless steel tanks which hold between 55 to 70 hectolitres which enables separate vinification of different plots. Malolactic fermentation occurs in barrel and the wine is aged in a proportion of new oak that varies between 50 to 70 new oak. The wine is bottled without filtration after between 15 and 18 months. Annual production of the Grand Vin is approximately 50,000 bottles. The second wine La Borderie de Chauvin is produced from younger vines.
