THE GOOD DOCTOR'S CELLAR

I have been fortunate to have sampled and indeed served wines from the Doctor's Cellar on numerous occasions. As a regular client of the restaurant where I was head sommelier, the Dr. and his wife and later his entire family would convene for some spectacular tastings, often based around a particular vintage in horizontal or an Old World vs. New head-to-head. The consignor and his wife are true lovers of the cuisine and wines of France and are on first-name basis with the finest chefs of the last 30 years through their regular travels. They are also, I must stress, two of the most genial, generous and modest individuals that I've ever known. It's always been a pleasure to work with them in every capacity. From comparing the '82 and '61 La Mission Haut-Brion one night to a complete lineup of Coche-Dury Meursaults the next, from '47 Ausone to '47 Krug Collection, all bottles have been truly beautiful examples of everything they ought to be.
A great collector will always build a great cellar but collections come and go, diminish and replenish; this is but the most recent thinning of a true lifetime of passionate collecting for the purposes and pleasures of drinking. The current cellar is custom built, temperature and humidity controlled and very cold. A meticulous organizer, our consignor has secured a place for everything and everything in its place.
