The cistern was previously owned by Rosa Lewis, a British chef and owner of the Cavendish Hotel in London. She was highly regarded as "Queen of Cooks' and she was chef to Edward VIII, Lady Randolph Churchill and the Astors. The cistern had been purchased for her country house in Jevington, East Sussex, in 1947.
