SELOSSE RARITIES
THE WIZARD OF AVIZE
Anselme Selosse is one of the most respected and sought-after growers making wine in Champagne today. He studied with winemakers in Burgundy and has adopted a similarly singular method of winemaking (35 of his lieux-dits are even vinified in barrels bought from Domaine Leflaive) and owns 4 hectares of unique plots in Avize, Oger, Cramant, and Aÿ. The wines are rich, but balanced. There is an opulence, born from Selosse’s decision to harvest extremely late as well as his use of bâtonnage, a technique more commonly used for Muscadet in the Loire. The wines also maintain a racy acidity due to limited use malolactic fermentation and low dosage. Selosse holds the wines in bottle for up to eight years before disgorgement, because only then are they ready to drink.
