DAL FORNO
Romano dal Forno based in the Veneto region of Northern Italy is famous for Valpolicella, Recioto della Valpolicella and their Amarone della Valpolicella.
Romano dal Forno only established his estate in the 1980s and started selling his wines commercially in 1983, but has already reached cult status especially with his Valpolicella Classico. Romano has been a pioneer for a radical change in Verona's winemaking. The small estate is located outside the Zona Classica for Valpolicella, at Illasi. From 8 hectares of vineyard dal Forno focus his efforts on the Corvina and Rondinella grape varieties emphasizing small yields and rigorous selection during the harvesting. Fermentation and maceration are designed to extract maximum varietal character from the grapes.
Dal Forno has adopted the use of oak barriques and has been developing ways to ferment the sugars completely out in wood, as if the wine were white. This style of vinification gives the oak a vital role in the ageing process, without letting it dominate completely.
