Patrick Bize was one of the first to buy his own oak-staves, to be sure of their origins, and to give them extra rain-leaching and aeration, before they were made up into barrels. Many small attentions to detail contribute to the complexity of these wines, which have remarkable, spicy perfumes with silky, harmonious textures and lovely length. Savigny-lès-Beaune Les Fourneaux 1991 is presently concentrated in flavour and delicious for drinking, yet has a firm finish. It can be enjoyed or kept. The Jeroboam of Les Guettes 1990 could be opened, but will certainly still gain in complexity and smoothness for 2 - 5 years. AH
