This is the silhouette style of the Official School, in which a thin plane of darker material is cut through to create the design (see, also, lot 115).
Monkeys were a popular design for this official range of bottles, as the monkey (hou) is a homonym for marquis (hou), the second highest grade among the nobility, and represents the aspiration for a corresponding raise in rank.
